I had the same issue just after upgrading to 64 bit ubntu 12.04: usb headset detected (both in the sound settings and by lsusb), but no sound. I managed to get it working after restarting pulesaudio (killall pulseaudio) and fooling around with the sound settings and the pulseaudio volume control for a while. I think it was muted somehow, in a not-so-easy-to see way...
