The behaviour is correct - Document>Scan>Photo and Document>Scan>Text
are both radio buttons. To actually scan a page you want
Document>Scan>Single Page. I'm going to close this as invalid with the
issue being that the HUD isn't clear these are radio buttons not
actions. Please re-open if simple-scan can do anything to make it
clearer to the HUD which actions should be selected by default.
