Thanks, indeed, some changes I made to /etc/default/grub seem to be responsible 
for this.
While I'm not exactly sure what exactly caused the problem...
after reverting the changes I no longer have problems updating kernel images.

Thanks for taking the time to review this. It seems this problem was
entirely due to 'user error'. Nothing wrong with Ubuntu  :-)
