I have removed the quiet and splash options on the boot command and
nothing happened. I don't see any logs on boot that I can copy or take a
picture of.

I don't have a gfxpayload option on the boot menu or a vt.handoff=7
either. However, I have a $vthandoff option. When I remove the quiet,
splash and $vthandoff options, it boots straight to the windows system.

What else can I do to help debug this problem?
