The error in your log is:

 Processing triggers for plymouth-theme-ubuntu-text ...
 /var/lib/dpkg/info/plymouth-theme-ubuntu-text.postinst: 21:
/var/lib/dpkg/info/plymouth-theme-ubuntu-text.postinst: cannot create
/lib/plymouth/themes/ubuntu-text/ubuntu-text.plymouth: Directory nonexistent
 dpkg: error processing plymouth-theme-ubuntu-text (--unpack):
subprocess installed post-installation script returned error exit status 2

This is not a bug in the plymouth-theme-ubuntu-text package; the
/lib/plymouth/themes/ubuntu-text directory mentioned here is shipped in the
plymouth-theme-ubuntu-text package, but it is not present on your system. This
means one of three things:
 - filesystem corruption
 - you have manually removed directories from your filesystem that you should
not have
 - some software component (other than plymouth) has incorrectly removed these
directories on your behalf.

To correct this error, you should run 'sudo apt-get --reinstall install
plymouth-themes-ubuntu-text' from the commandline.
