as said before, displayconfig-gtk does no longer crash when launched
without an existing xorg.conf but returns a blocking message :

GUI : "You need administrative rights to change all screen settings"

command : sudo displayconfig-gtk
"fallback mode
*** Error: no screens were specified in the ServerLayout section"

Some configs (mine in particular) accept lo launch gdm/gnome without an
xorg.conf, and a newcomer that doesn't want to know how it works would
probably be happy if displayconfig-gtk proposed him to create a generic
config file (with the open-source drivers available)...

note : i don't know how hard it could be to implement such a function
and it is far from being a fundamental functionality of the program, but
my comment is just a suggestion for future improvements of
displayconfig-gtk
