@ Martin I don't recall creating the "PostgreSQL" user... just installing the software. The software that creates and uses the PostgreSQL database creates it's own user.
Interestingly, if I go into Ubuntu's Users & Groups, the user 'PostgreSQL' is shown as disabled.
