Can you give some more information about what happens? If you run system
monitor, do you get any cpu percentage on wait? What is the load average
of the system?

If you run many programs, it is likely that the system is swapping. Did
you check if the swap process uses a lot of cpu. Does any other process
use a lot of cpu?

You say this behaviour started recently. Did it not freeze before with
the same amount of programs running? If so, did you check with the
smartmon tools if your HD has errors? It might be that your HD is dying.
