And if I remove the video instead of the audio (-vn option instead of -an), it 
does not play either and "jumps" to the end of the stram.
I tried to tweak the libvorbis options on bitrate and quality values, but it 
does not seem to make any difference.

I also tried to manually modify the header properties with mkvpropedit,
but it always seems to delete both audio and video tracks in the header,
giving a file considered corrupted by Firefox (but still playable on
Totem, VLC and Chromium... It looks like these players are less
dependent on the mkv header)
