OMG!!!!! The settings under Properties/Advanced ARE editable (I mean, in qpdfview too). It's simply that the UI is so counterintuitive that you have to find out how. You have to double-click on any value, then it will turn into a dropdown, which then you can use to select the value.
This should be reported to Qt. It definitely looks like a non-editable list.
