The crash doesn't appear to be related to grub though; in UbiquitySyslog.txt; we see it instead mentions /target/etc/apt/sources.list -- the sources.list file that would get installed on the installed system -- is not found or corrupt.
If you try this installation again, could you switch to a different VT during the installation (at the end, mostly, when or not long before it shows the error), and run 'ls -l /etc/apt', then if the file is there, also copy its contents somewhere to attach to this bug?
