They point release media installs a backport of the graphics stack from newer releases so they work on newer devices (https://launchpad.net/ubuntu/+source/xorg-server-lts-vivid being used in 14.04.3), to go back to the 14.04.1 version just install xserver- xorg-lts-trusty or use 14.04.1 install media. It's safe to update after using the 14.04.1 media as it wont automatically upgrade the graphics stack.
