Thanks for taking the time to report this bug. The sound buttons on the phone, change the volume of the current sound role being used. So for instance, if you have an incoming call/ alarm ringing, the current sound role is Alert during which any volume changes you make are to that.
If you change the volume before/after the call, then you are changing the value of the Media sound role and not the Alert sound role. In Android, if you notice, the sound volume dialog has 3 bars that you can slide to adjust the call/alarm volume, media volume etc. That is missing in Ubuntu Touch.
