I think I solved my problem (maybe not the better way) :

In /lib/plymouth/themes/ubuntu-text, there is a file :
ubuntu-text.plymouth 
But apt-get looked for 
ubuntu-text.plymouth.in

ubuntu-text.plymouth was empty, so I just created a new file with the
same name and ".in" extension and relaunch upgrade

$ sudo touch /lib/plymouth/themes/ubuntu-text/ubuntu-text.plymouth.in
$ sudo apt-get upgrade

=> upgrade successful
