I'm not aware of any requirement that Windows has to have UEFI on to be
used. One may install Windows with UEFI engaged, or not. It is
recommended not to use UEFI, given UEFI implementations can be spotty.

Dual booting Windows and Ubuntu has been done before UEFI was even
invented.
