I got the same problem.
It is related to changes from php5 to php7 as far as I can see.
The Ubuntu package is a ldap-account-manager version 5.2 where the statement 
for ldap-account-manager 5.3 is "LAM 5.3 with PHP 7 compatibility".

Actually I got several problems after upgrading from Ubuntu 14.04. To
test it had nothing to do with the upgrade process I also tried it out
on a completely clean server install and the ldap-account-manager was
not working at all.

I have tried to build a new package based on the ldap-account-manager version 
5.5 and it seems to work so far.
I did add php-xml and php-zip to dependencies.
I have also install libapache2-mod-php which seems to be needed now, but I am 
not quite sure how to add that properly as dependency.

I considered trying the deb package from the ldap-account-manager site
but I was not quite sure if it handled the installation in the same way
as the ubuntu package. There I choose what to me seemed the fast and
safe way of making a new ubuntu package based on the ubuntu package for
5.2 and the new upstream source for 5.5.
