I ran ldd on all *.so files under /usr/ and couldn't spot anything suspicious.
I tried again the various voodoo procedures I initially attempted after deleting the old opencv libraries, and it turns out that deleting ~/.cache/gstreamer-1.0/ was the correct solution to whatever problem I was having, so now I have functioning Totem and VLC. If I manage to narrow down the exact problems I'm still having with video output to something coherent, I'll come back with more.
