Your disk is partitioned to boot in bios mode because it is partitioned
with MBR instead of GPT and has no EFI system partition.  You can see
the disk layout in the partman log file.  Your syslog shows the reason
the install crashed is because you are running in EFI mode but have no
EFI system partition:

Jul 11 16:47:07 ubuntu ubiquity: Installing for x86_64-efi platform.
Jul 11 16:47:07 ubuntu ubiquity: grub-install: error: cannot find EFI directory.

This also should be fixed in 18.04.1 so that it will automatically
install the bios version of grub instead.
