If you have the indicator Applet installed there are not one but three speaker symbols each doing different things, it shows up under the middle drop-down menu under Playback Streams. I'll be honest, I am not familiar with the internals of Ubuntu's audio system. Back in the old days when you had /dev/audio and you wrote to it, or used ioctl calls to change the bit rate or width, I could grock it, now it's too much of a hack for me to keep track of.
