I can observe the issue if I set the "Tools > Options > Internet > E-mail" field to "/usr/bin/thunderbird". But if IĀ unset the field (blank) then LibreOffice calls xdg-email, which figures out the default e-mail client as expected (assuming thunderbird is configured as your default e-mail client).
Calling directly /usr/bin/thunderbird is blocked by the libreoffice- senddoc apparmor profile.
