Debian's Ubuntu ships with a patch that removes the card styles shipped with gnome-hearts and loads the Aisleriot cards instead, depending on a debian-specific gnome-cards-data package. Ubuntu packages Gnome (and gnome-games) from source and not from Debian. That means that the Aisleriot cards are in a different place.
IIRC from another bug, Ubuntu will now drop that debian-specific patch for upcoming releases of gnome-hearts (version 0.2 and up).
