Debian's Ubuntu ships with a patch that removes the card styles shipped
with gnome-hearts and loads the Aisleriot cards instead, depending on a
debian-specific gnome-cards-data package. Ubuntu packages Gnome (and
gnome-games) from source and not from Debian. That means that the
Aisleriot cards are in a different place.

IIRC from another bug, Ubuntu will now drop that debian-specific patch
for upcoming releases of gnome-hearts (version 0.2 and up). In the mean
time, the easiest fix is to find where the aisleriot cards (seach your
system for bonded.svg or paris.svg) are and symlink that directory from
/usr/share/pixmaps/gnome-games-common/cards
