This option is offered by the alternate installer by using LVM and
crypting the (only) physical volume.

There is a very good reason: The system needs to boot. For booting,
executable (unencrypted) code must by executed. This means that the
kernel and the initrd MUST be unencrypted. This means that /boot must
not be crypted.

Known problem in usplash. I couldn't find the bug on the first sight,
feel free to file one.

Again the same bug as above. usplash just exits on VT change, and does
not restart.

Thank you for your interest in improving Ubuntu. However, your bugreport
contains various issues, that should be reported
seperately. Unfortunately, the only issue that is valid is the usplash
issue, which is know for quite some time now. I have to reject this
report therefore.
