OK, thanks. Yes I can now see one 1920x1080 display is connected via eDP (laptop) to the Intel GPU.
I can't tell which GPU the external monitor is wired to. Sometimes laptops will wire an external port to the Nvidia GPU and sometimes they are wired to the Intel GPU like the laptop screen is. One immediate problem I can see is that the Nvidia X driver is not loaded so if any ports were connected to the Nvidia GPU then those monitors would indeed be missing...
