pitti, have you already tried network-manager 1.10.14 from bionic- proposed (bug 1754671)? It did not make it to -updates as there appeared two regression reports (bug 1829838 and bug 1829913), but if these regressions do not affect your use case you could try it. I would like to know whether it perhaps fixes your manual route problem.
