Ok, I found the cause: I had the meta package linux-image-generic installed, but not the metapackage linux-generic. For that reason, when kernel was upgraded the package with the kernel headers wasn't upgraded, and that caused the issue (that of course disappeared reverting to the previous kernel version)
After installing the metapackage linux-generic I managed to update to the new kernel and the nvidia drivers worked as supposed.
