This also happened in writer as well. The window would open up and fill the entire screen and cover even the top and bottom panels of the standard gnome desktop. The title bar was missing. The topmost bar was the file edit menu and the bottom bar was the status bar. Couldn't find a way to fix it without moving the whole .openoffice.org2 to the trash from the home folder and letting open office rebuild it.
I couldn't reproduce it either. I was bouncing between the full screen view Ctrl-Shft-J a few times during the session.
