Hope this helps users like me searching about this problem: I had this problem many-many months ago and then stopped using Evolution. Now checked again, much newer version, but same issue. In my case the solution was: go to Preferences -> Composer Preferences -> General tab -> Replies and Forwards -> check 'Reply style': make sure that it is not 'Do Not Quote'. Try which option is best for you. (I chose 'Inline (Outlook style)' because it contains not only the original sender, but the recipients as well.)
