I can reproduce this problem (exactly what is described in comment #10) with the 20210324 daily build of Ubuntu MATE. The problem *does not* exist in the 20210324 daily build of regular Ubuntu.
The only difference I see here is that when you start an install and you're presented with the Install screen, the regular Ubuntu says "Install" and the Ubuntu MATE one says "Install (as superuser)".
