I have more updates.

I booted into windows and did a Lenovo update and it pulled down a BIOS
update. That seems to have changed the frequency of the issue. Earlier
the issue was happening every 30 minutes or so but now it has reduced to
only once in the last 24 hours and that happened when the system was
left unattended overnight. I was wondering if this had something to do
with power management or anything like that?

I came across this issue related to a Samsung SSD drive -
https://bugs.launchpad.net/ubuntu/+source/linux/+bug/1678184. Was
wondering if I should try that. But now my repeatability of the freeze
is tougher. So not sure.

I had also run into another issue after I ran the BIOS update. My Wifi
adapter disappeared in Ubuntu. I booted into windows and disabled APM on
wifi adapater and did a cold restart into Ubuntu and the adapter came
back.

The bios version is now GJCN19WW build date 2/23/2021. Phoenix
