Public bug reported: As detailed in this https://github.com/containerd/containerd/issues/5547 theres an issue that breaks docker-compose volume declarations (and possibly also Dockerfile VOLUME statements)
this should be fixed in containerd-1.5.3 (which comes with with updated runc).
