Can you try the following:

1. Play some music on laptop speaker without HDMI connected
2. Stop the playback
3. Connect to HDMI monitor with audio output
4. Resume playback. I get no audio here. Going to the GNOME sound config and 
doing speaker test also results in no sound. That said the audio meter is 
bouncing around.
5. Restart wireplumber user service
6. Restart playback. I get sound at this point. GNOME sound test works as well.
