I did a fresh install of Gutsy a while ago, but I copied over my .gnome2 folder (including gconf) and others from my old Feisty* installation. This seems to have caused the "no plots" problem for me as well, but running that "gconftool-2 --recursive-unset /apps/gnumeric" command fixed it for me.
