Next time this happens, can you try clearing out the Wireplumber state
files and restarting the service to see if it fixes the problem,

rm -rf ~/.local/state/wireplumber/
systemctl --user restart wireplumber

I suspect
https://gitlab.freedesktop.org/pipewire/wireplumber/-/merge_requests/664
might fix this problem. At least, it sounds similar to
https://gitlab.freedesktop.org/pipewire/wireplumber/-/issues/634

You might also see if profile autoswitching is the problem. Turn it off
with

wpctl settings bluetooth.autoswitch-to-headset-profile false

Permanently setting that in your config might be a workaround for now if
the above works.
