You are probably getting hit with bug 2115148
As that bug suggests, make sure you have the proper -headers packages
installed. You may need to temporarily remove the Nvidia driver (i.e. switch to
nouveau in driver manager) to allow the -headers to install/configure.

Alternatively, you can use the -dkms version to avoid that bug in the future
(since Ubuntu seems clueless on fixing it). Before you do that, make sure you
have your MOK set up for use with SecureBoot (or disable SecureBoot in your
BIOS/EFI):
https://wiki.ubuntu.com/UEFI/SecureBoot#How_can_I_do_non-automated_signing_of_drivers.3F
The last step, kmodsign, will run automatically when you install nvidia-dkms
package
Tips: If you are on a screen with an <Ok> button and you cannot click it and
pressing Enter does not work, press the tab key to access the <Ok> button. And
IIRC, the password won't be shown on the screen (not even * characters) as you
type it.

Once that's done, you can remove the Nvidia driver (i.e. switch to nouveau in
driver manager), and then reinstall it running:
sudo apt install nvidia-driver-580 nvidia-dkms-580
