how are you accessing the debuginfod service? the man 1 debuginfod-find page describes DEBUGINFOD_TIMEOUT. it's used in libdebuginfod from debuginfod-client.c and read from the env. so from looking at this, that env var should be read when used via gdb which linkts to libdebuginfod.
