I second that it would definitely be useful to have the option for a
free and a nonfree ffmpeg (as the nonfree version is required for a lot
of use cases).

I'm not debian packaging expert, but wouldn't the way to do this be to have two 
packages:
ffmpeg-free: replaces ffmpeg, conflicts ffmpeg-nonfree, provides ffmpeg
ffmpeg-nonfree: conflicts ffmpeg-free, provides ffmpeg

So that existing packages don't need to have their dependencies updated
(unless they need to be marked as explicitly requiring the nonfree
features)?  Would something like this work?
