Unfortunately, I didn't think to save off a copy of the old xorg.conf before upgrading. But I am reasonably sure it was set to nvidia (not nv). Manually editing xorg.conf and setting the driver from vesa to nv and restarting X does allow it to come up in 1600x1200, but I couldn't find a way to make it happen via any of the usual config tools.
