Well, the original post mentions that without g-p-m the brightness transition works smoothly, so I thought a fix could also be possible with Gnome.
My card is a GeForce 8400M GS (I have a Vostro 1400 lappy) and I have this problem with both nv and nvidia-glx-new. Please let me know of any technical details I can give to help. What I find curious is that I see a lot of people solving this problem by tweaking /etc/acpi/video_brightnessdown.sh and /etc/acpi/video_brightnessup.sh, while for me changing those files - even deleting them - has no effect all. It seems they're not what the system is calling when I press the fn brightness keys.
