Michael, have a look at your Xorg.0.log.old. Does it say something like '(EE) Failed to initialize GLX extension (Compatible NVIDIA X driver not found)'. If so, try adding the nvidia module in /etc/modules.
It seems to me, like nvidia kernel module is missing every second or third reboot some how. Then Xorg terminates because it lacks glx support.
