We are talking about two things here: writing (author) and proof-reading (editor).
Writing: first read the current ubuntu-desktop.tex file (which is copied from the Oneiric version), or chapter 2 if you have generated the pdf file, to check if what is written is still true for 12.04 (luckily, most of the text is still valid). Either rewrite, or add new text for things that have changed or are new. If you look at the subchapters below [1], we mainly talk about the chapter up to and including Workspaces. I understand that Sayantan wil write about the HUD.
It is also necessary to redo the screenshots.

Editing: Once the chapter is (re)written, it is the editor's job to proof-read the chapter and make corrections, if necessary.

If you want to (re)write, please send a message to John. If it is only the editing you want to do, let me know. John does the coordination for the authors, while I do it for the editors.
