It is possible to create a new page by wisiting that url, eg. https://wiki.ubuntu.com/Touch/CoreApps/MusicPlayer However someone from Canonical should probably say a word first before unofficially extending the core apps project.
For now I guess we can use this list. As Canonical seems interested in this they will probably point out what to do pretty soon.
