@Eric, I see that you are a step ahead of me, trying to install the system image... How did your device behave after flashing the new boot.img, and before installing the ubuntu system image?
In my case I get stuck in the samsung logo, which does not let me boot into recovery, and so I can not continue with rootstock-touch-install. According to this discussion here, https://forums.ubports.com/topic/42/porting-ubuntu-touch-on-zenfone-5/2 being stuck with the first logo screen, has to do with configuring the kernel for the particular device. I cannot figure out if this is really my issue, (so I should go about the device specifics), or if I should first figure out how to boot into the recovery while having ubuntu's boot.img installed. any ideas?
