I tried this again without setting "default-series: trusty", thus defaulting to precise (ugh, shouldn't we switch to trusty now? precise is certainly not the currently preferred deployment target any more).
Running "juju deploy juju-gui" still showed "Added charm "cs:trusty /juju-gui-5" to the environment.", so perhaps the comment in the yaml is wrong and the default is indeed trusty these days?
