Hi, the Italian translation is complete upstream:
https://l10n.gnome.org/vertimus/simple-scan/gnome-3-36/po/it/ and it has been at least since GNOME 3.34. As far as I can tell, there should not be any differences between upstream GNOME and Ubuntu. Of note is that the last updated Italian translation available in Launchpad appears to be from 2018.
