Hi,

the Italian translation is complete upstream:

https://l10n.gnome.org/vertimus/simple-scan/gnome-3-36/po/it/

and it has been at least since GNOME 3.34.

As far as I can tell, there should not be any differences between upstream 
GNOME and Ubuntu.
Of note is that the last updated Italian translation available in Launchpad 
appears to be from 2018.

I'm not really keen on updating the translation on Launchpad, since they
should be synced automatically with upstream.
