A quick look at iTunes 8 (which is needed to sync iPod touches) in the  
wine appdb comes up with  
http://appdb.winehq.org/objectManager.php?sClass=version&iId=14793 
  . Unfortuantly the reporter says that syncing with iPhones doesn't  
work, so I'm also guessing that iPod touches won't either.

There is no harm in trying out yourself though, and reporting your  
findings to the above link.
