Some things I've noticed, in case they might help. This freeze seems to happen almost every time a frame buffer is used to render a 3D scene to a texture. This driver version also gives graphical glitches like missing parts of orthographic draws and extra stretched triangles in 3D views, as well as flickering "noise" (not every time though). This is in 3D renders with OpenGL. None of these bugs were present in Ubuntu 11.10.
