https://wiki.ubuntu.com/X/Troubleshooting/Freeze has some directions for troubleshooting freezes, although it's slanted more towards Intel. But you might find some useful techniques for -nouveau too. Really, you want to get mlankhorst's attention since he'll be better able to help with this than me.
