I can confirm the same behaviour on my laptop. I changed the permissions to /etc/X11/xorg.conf (sudo chmod 666 /etc/X11/xorg.conf) and tried again but still not able to save the setting changes. I WAS able to save the changes when starting nvidia settings as root (sudo nvidia-settings).
