It's the VGA display that's unhappy. My "default" config for ARANDR, and therefore the one that the machine often shuts down and boots up as, is DVI + VGA enabled, HDMI disabled.
I notice, however, that on the screens that load prior to initializing X (the Ubuntu logo and the text output that's occasionally visible for half a a second as the machine is shutting down or resuming from sleep), the resolution seems to be 1280x720 (either stretched or not, depending), which is that of the HDMI projector. the VGA and DVI displays are both 1680x1050.
