I have experienced the same resolution fallback weirdness with multiple devices over the years. In all cases the problem was either a poor quality HDMI cable or a poor quality connection at one end of the cable.
Please try unplugging both ends of the cable/adapter and check them for dirt or bent pins. Plug everything back in firmly and try again.
